Cookie Tips Below..

 

Grease cookie sheets only when a recipe recommends it otherwise cookies will spread out too much.

When making cookies I always mix all of my dry ingredients together in one bowl and my soft or liquid-type ingredients together in another bowl. Once the ingredients are well blended separately, then I add all the ingredients together and mix.

To keep cookies from spreading out or flattening too much on hot or humid days…chill the cookie dough in the refrigerator for 15-20 minutes before baking.

I use ® Butter Flavored Crisco whenever I bake cookies. This eliminates measuring butter and shortening.

If I only have imitation vanilla flavoring instead of the real thing I double the amount of vanilla the recipe calls for.

Heavy-gage cookie sheets bake cookies more evenly than glass or dark colored baking pans.

Always use the large eggs in cookie recipes.

Preheat your oven for at least 10-minutes before starting to bake your cookies so that the temperature is right or at least close to the recommended baking temperature.

Always bake cookies on the middle rack in your oven so that the cookies will not get too dark on the bottom or the top.

Always rinse off your cookie sheet under cold water and dry thoroughly with a dishtowel or paper towels before baking another batch, otherwise the cookie sheet may be too hot and cause your next batch of cookies to flatten.

I use a small ice cream scoop when dropping cookie dough onto my baking sheet.

Allow cookies to cool thoroughly before trying to ice them.

Measure flour by spoonfuls into measuring cups, this helps to lighten the flour and then level the cup off using the flat end of a spatula.

Always pack brown sugar into dry measuring cups for exact measurements and spoon other sugars into dry measuring cups.

I always heat my cookies just a little bit in the microwave before serving so they have that fresh out of the oven taste. I even do this with store bought cookies
